Zucchini Nut Muffins

Homemade muffins are not only simple to make but also nourishing and satisfying. These Zucchini Nut Muffins are perfect for a quick, portable breakfast or a healthy snack. Packed with wholesome ingredients, they offer a delightful blend of flavours and textures.

*The recipe yields 12 muffins
INGREDIENTS:
1 ½ cups oat flour
1 ½ cups almond flour
2 cups zucchini grated
½ cup nuts (cashews, almonds, walnuts, etc) chopped
2 tsp ground coriander
2 tsp fennel seeds
½ tsp cinnamon
1 tsp rosemary chopped
1 ¼ tsp salt
4 tbsp olive oil
Maple syrup, to taste
DIRECTIONS:
Preheat your oven to 350°F (175°C)..
Line a 12-cup muffin tin with parchment paper liners.
Mix all the ingredients in a large bowl in the order listed above.
Add a splash of water if needed to reach the desired consistency.
Scoop the batter evenly into the prepared muffin cups.
Top with additional nuts if desired.
Bake for about 30 minutes, or until a toothpick inserted into the center comes out clean.
Cool and enjoy!
