Greek Salad with Tofu “Feta”

This refreshing and delicious Greek salad recipe features cucumber, tomatoes, olives, peppers, and tofu feta—a great and simple summer side dish!

*The recipe yields 3-4 servings


INGREDIENTS:

  • 1 cup extra-firm tofu crumbled

  • ½ cup red wine vinegar

  • 1 tsp dried oregano

  • Salt and black pepper, to taste

  • 6 cups salad greens

  • 1½ cup cucumbers chopped

  • 1 cup tomatoes diced

  • 1 bell pepper sliced

  • ½ cup red onions diced

  • ½ cup Kalamata olives chopped


DIRECTIONS:

  1. Mix the tofu with vinegar, oregano, salt, and pepper together in a bowl.

  2. Let marinate for 1-2 hours in the fridge.

  3. Toss salad greens, cucumbers, tomatoes, onions, and olives in a large bowl.

  4. Add the tofu "feta" to each serving separately and if there are some leftovers, refrigerate it apart from the salad.

  5. Serve and enjoy!
