Greek Salad with Tofu “Feta”

This refreshing and delicious Greek salad recipe features cucumber, tomatoes, olives, peppers, and tofu feta—a great and simple summer side dish!

*The recipe yields 3-4 servings
INGREDIENTS:
1 cup extra-firm tofu crumbled
½ cup red wine vinegar
1 tsp dried oregano
Salt and black pepper, to taste
6 cups salad greens
1½ cup cucumbers chopped
1 cup tomatoes diced
1 bell pepper sliced
½ cup red onions diced
½ cup Kalamata olives chopped
DIRECTIONS:
Mix the tofu with vinegar, oregano, salt, and pepper together in a bowl.
Let marinate for 1-2 hours in the fridge.
Toss salad greens, cucumbers, tomatoes, onions, and olives in a large bowl.
Add the tofu "feta" to each serving separately and if there are some leftovers, refrigerate it apart from the salad.
Serve and enjoy!
