Beet & Black Lentil Hummus Recipe


Ingredients


  • 1/2 cup black lentils, rinsed and soaked overnight

  • 2 medium beets, peeled and cut into chunks

  • 1 clove garlic, peeled

  • 2 tablespoons tahini

  • 2 tablespoons cold-pressed olive oil

  • 2 tablespoons lemon juice

  • 2 teaspoons grated lemon zest

  • 1 teaspoon sea salt


Method:


  1. Drain and rinse the soaked lentils.

  2. In a medium saucepan, bring lentils, beets, and 1 cup of water to a boil.

  3. Reduce heat to medium-low, cover, and simmer for 15-20 minutes; until all water is absorbed. Alternatively, roast the beets and add them directly to the food processor.

  4. Drop garlic into the food processor.

  5. Add tahini, olive oil, lemon juice, lemon zest, and salt; process until creamy.

  6. Add cooked lentils and beets to the food processor, and blend on high until smooth.

  7. Season to taste and enjoy with celery sticks, in fresh salads, or spread onto toasted bread for a delightful snack or appetizer!
