Detox Spring Salad

Consuming a variety of vibrant, fresh foods helps the body's energy balance. When you eat raw foods, they provide you with a wealth of energy and enzymes.
This is a simple and colourful salad recipe that you can prepare once a week.
Feel free to experiment with different ingredients after you've tried this!
*The recipe yields 4-5 servings
INGREDIENTS:
Salad:
4 cups lettuce mesclun (10 oz)
4 cups baby spinach (10 oz)
4 cups red cabbage shredded
2 beets grated
2 carrots grated
1 zucchini grated
1 jicama grated
2 bell peppers diced
1 large cucumber diced
Alfalfa or other sprouts 200-300g
Fresh green peas diced +-15oz or chopped broccoli
1-2 tbsp dressing to taste!
Avocado Dressing:
1 avocado
1 garlic minced
1/4 cup water
1 tbsp fresh dill
2 tbsp lemon juice
stevia, salt and pepper to taste
DIRECTIONS:
Mix the lettuce in a big bowl.
Add the cabbage and grated vegetables on top of the greens.
Add the bell peppers, cucumber, sprouts and green peas.
Top with the dressing and enjoy!
*If splitting in 4-5 lunches, keep the grated vegetables and the dressing separately.
